Mediterranean Inspired Kale Salad
A couple weeks ago, I met a girlfriend for lunch at the Cheesecake Factory restaurant and I ordered their Falafel Kale Salad. Well ever since then, I’ve been craving a Mediterranean Inspired Kale Salad. This obviously doesn’t have any falafels on it, but it is a delicious and fairly simply salad to make. I like to serve mine with a dollop of Hummus on the side and I also enjoy taking either store-bought pita chips and crumbling them on top for a little crunch or serving warm pita bread on the side.
Feel free to also add some avocados, chickpeas or even quinoa or bulgar wheat into this salad for some different options.
The dressing is a pretty classic dressing and you can use either lemon juice or red wine vinegar if you choose. And if you’re not up for making the dressing from scratch, then I would recommend a store-bought Greek salad dressing.

Ingredients
For the Dressing:
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- ½ teaspoon Dijon mustard
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon fine sea salt, or to taste
- ¼ teaspoon ground black pepper, or to taste
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
For the salad:
- 4 cups kale, thinly sliced
- 2 cups romaine lettuce, thinly sliced
- ½ cup pitted kalamata olives
- ½ cup cherry tomatoes, halved
- ½ small cucumber, thinly sliced
- ⅛⅛ cup red onion, thinly sliced
- 2 to 3 tablespoons feta cheese, or vegan feta cheese
Optional Toppings:
- pita chips, crumbled
- or warm pita bread

Instructions
Make the dressing:
- In a small bowl or jar, mix the ingredients for your dressing. Taste and add more salt and pepper, if needed.
Prepare the salad:
- In a large mixing bowl, add the kale, romaine lettuce, and dressing and mix well together. Then lightly toss in the rest of your ingredients.
- Serve and top with some crumbled pita chips on top or warm pita bread alongside, if using. Enjoy!
